It's Martha Stewart King Day, Didn't You Know?

In honor of Martin Luther King Day, I thought I would share a charming little story about myself with all of you. Back in the day when I was in Kindergarten, I came home on February 17th after school and loudly proclaimed to my mom that it was "Martha Stewart King Day!" She just about died. I then told her I thought we should make a cake to celebrate (not much has changed there). Apparently I was just too cute & convincing to say no to, so we baked a cake. And we have baked a cake every Martin Luther King Day since. I'm incredibly grateful for this man & I hope all of you will take time to reflect on the positive impact he had on the world and how we all can help to continue his legacy of love, tolerance, and change.

Back to cake. Today, we decided to make our favorite chocolate cake ever known as "Dori's Chocolate Cake". Note: Dori is one of my mom's friends from many years ago. When I finally met Dori a few years ago, I honestly felt like I was meeting a celebrity. It was so exciting. But anyway. This cake is to die for and I'm going post the recipe.

Ingredients:
1 1/2 cups butter
3 cups sugar
2 tsp vanilla
5 eggs
1/4 cup hot water
1 cup buttermilk
2 cups flour
3/4 cups cocoa
1 tsp salt
1/2 tsp baking powder

Directions:
1. Grease Bundt cake form
2. Preheat oven to 325 degrees
3. Cream the butter
4. Beat for 5 minutes the sugar and vanilla with the butter
5. Add the eggs one at a time while continuing to beat
6. Combine the hot water and buttermilk then add to mixer
7. Add flour, cocoa, salt, and baking powder
8. Pour batter into cake form and bake for about 70 minutes

We like to then dust some powdered sugar over the top and serve warm with vanilla ice cream. It's delicious, trust me.

In other news, I mentioned in one of my IG posts that our church is holding a Valentine's Day dance for all the married couples. I think this will be the perfect opportunity to wear my prom dress from junior year. I went to prom 3 out of my 4 years of high school and like finding excuses to wear my junior & senior year dresses as often as I can (the one I wore sophomore year I bought for less than a hundred dollars at Macy's mainly out of desperation. It's not worth putting on again). I absolutely LOVE the dress I wore that year. It's pink, puffy, and has some gorgeous sparkle details. I wish I had more black tie events to go to. Or was a princess.

I'm the one in the middle. In case you couldn't guess.

I love my Disney Dooney.

Just had to include this photo of my late dog, Hoss. I wish he had been my date.

Would any of you wear your old prom dress again?

Just Ate: Yummy quinoa salad with roasted veggies & kale (to justify my cake-eating later).
Excited To: Take blog photos with my friend this Thursday!
Knee Is: A lovely shade of green today with some purple spots.
Random Fact: I have written in my journal every day since I was twelve.
Days Until Christmas: 338
